Abstract

In order for the beef cattle chain to consolidate and expand the space within the agribusiness, actions are needed to improve the pattern of cuts, and to understand what makes up this cut where we identify the edible part, such as muscle and fat, thinking about what will be placed On the consumer's plate. The objective of this work was to evaluate the tissue composition of the low cut of finishing lambs fed feedlot with diets containing increasing levels of crude glycerin. Twenty-four male lambs from a group of native sheep of the region, named "Pantaneiros", with an initial age of 90 days, were distributed in a completely randomized design with four treatments considering 0, 2,5, 5 and 7 , 5% inclusion of crude glycerin in place of corn in the concentrate. The animals were slaughtered when they reached the body condition score between 2.5 (slightly lean) and 3.0 (normal). The order of separation of the tissue components began with the removal of all subcutaneous fat from the cut, then intermuscular fat, muscle, other tissues, and finally bone cleansing. The tissues obtained in the dissection were weighed individually and the weights and yields were calculated in relation to the respective cut. The control treatment influenced (> 0.05) the muscle weight and total weight of tissue components. Diets containing increasing levels of crude glycerin did not influence the proportion of the tissue components of the low cut.
