Abstract: The quality of the product delivered to consumers has greater weight in customer decisions and choices. The processes and patterns that determine changes and improvements along the production flow, in the search to obtain higher yields, higher yields and higher yields in the market. In this work, the interference of carcass breakage on breast fillet yield was investigated, using tools such as process mapping, brainstorms, Pareto chart, cause and effect chart, prioritization matrix, PDCA cycle and 5W 2H. The present work was developed in a Poultry Slaughterhouse in Mato Grosso do Sul, based on a theoretical foundation on the subject, a historical survey of company data, diagnosis of the main causes of carcass breakage and the elaboration of an action plan for correction and improvement of the process.

Abstract: Family industries, with low production scale tend to have an empirical perception of the company's profits, which makes it difficult to make strategic decisions and predict the company's situation in the long term. With this, the present work aims to define the contribution margin through cost accounting and financial indicators applied in the company, analyzing scenarios and desired profits with the supplied product. In this sense, an exploratory research will be carried out, with technical procedures aimed at a case study in a family industry that produces stuffed straws, in order to show the company's financial situation, demonstrating whether the industry can afford the production costs, resource taxes and still make a profit.

Abstract: The relentless search for continuous process improvement, cost reduction and total elimination of waste was evidenced with the expansion of lean thinking. However, unlike mass production, Make to Order manufacturing companies, which have common processes for a diversity of parts whose demand changes according to the customer's specifications, find it difficult to apply the conventional practices of lean manufacturing tools. In this context, the present work presents the applicability of lean manufacturing techniques, such as value stream mapping, 5W2H methodology, Scrum, Kanban, Kaizen, the 20 key points, 5S program, in a small knitting factory whose production typology fits the characteristics of Make to Order (MTO). Therefore, based on information collection from the internal production process through direct observation, informal interviews with the owner and employees, and analysis of company documents, a case study was developed that suited the reality of the company and has the possibility of be put into practice, providing greater visualization and understanding of the process by the team by mapping the value flow, as well as improving engagement and communication with the Scrum methodology, increasing motivation with the 20 key points questionnaires, and increasing productivity, reducing of risks and the search for improvement remains rooted in the organizational culture of knitting through the 5S program. Thus, enabling the achievement of the results expected by the owner, ensuring compliance with customer expectations and reducing complaints and waste.

Abstract: This study aims to develop a business plan for a hamburger shop in Dourados. It is known that the business plan is an important tool for the entrepreneur, because planning is crucial when making the decision to open a new business. Therefore, the bibliographical reference for structuring the model was analyzed, divided into three main parts: marketing, operational and financial plan. On the marketing plan, a market analysis was carried out to obtain data regarding the target audience, competitors and suppliers, in order to establish the necessary strategies for preparing the sales projection, in addition to the 4 P's approach: product, place, price and promotion. The operational plan presented the physical location of the establishment and the physical arrangement of the entire production process, with the objective of determining production costs for all subsequent calculations. Finally, a financial plan was executed to project the feasibility of the future enterprise, calculating the initial investment and applying financial indicators (VPL, TIR, Payback) in the reports generated from the sales projection (Profit Statement, Cash Flow, Balance Sheet). It was concluded that all objectives were achieved, with a VPL of R$619,423.45, TIR of 107% and 1.9-year payback, which demonstrates the financial feasibility of opening the burger shop, being able to obtain back the financial investment and meet all demands from the hamburger market share.
