Abstract: Brazil has a great diversity in its flora. Some native plants are considered unconventional food plants (PANC), and many are unknown or underutilized by the population, due to the lack of use in food. Among these plants is the ora-pro-nobis (Pereskia aculeata Miller), a developed leaf cactus, most used and known in the State of Minas Gerais, Brazil. Studies point to its high nutritional value, rich in some minerals, proteins and fibers. This work aimed to insert this plant, dehydrated and ground, in the form of flour, replacing part of common white wheat flour in the preparation of bread. The result of the final product was bread with a good visual appearance of crust and crumb, with an aerated texture, color, odor and acceptable flavor. There was an important increase in protein (around 20%) and fiber content (around 333%), compared to white bread. In this way, the elaborated bread presented an increase in the nutritional value, compared to the bread elaborated only with wheat flour, especially of the nutrients fibers and proteins. Thus it is possible to increase the protein and fiber content in the diet of Brazilians, as shown by the results, as well as assist in the deficiency of these nutrients.; Brasil tiene una gran diversidad en su flora. Algunas plantas nativas se consideran plantas alimenticias no convencionales (PANC), y muchas son desconocidas o subutilizadas por la población, debido a la falta de uso en alimentos. Entre estas plantas se encuentra la ora-pro-nobis (Pereskia aculeata Miller), un cactus de hoja desarrollada, más utilizado y conocido en el Estado de Minas Gerais, Brasil. Los estudios apuntan a su alto valor nutricional, rico en algunos minerales, proteínas y fibras. Este trabajo tuvo como objetivo insertar esta planta, deshidratada y molida, en forma de harina, reemplazando parte de la harina de trigo blanco común en la elaboración del pan. El resultado del producto final fue pan con un buen aspecto visual de corteza y miga, con textura aireada, color, olor y sabor aceptable. Hubo un aumento importante en el contenido de proteínas (alrededor del 20%) y fibra (alrededor del 333%), en comparación con el pan blanco. De esta forma, el pan elaborado presentó un incremento en el valor nutricional, en comparación con el pan elaborado solo con harina de trigo, especialmente de las fibras nutrientes y proteínas. Así es posible incrementar el contenido de proteína y fibra en la dieta de los brasileños, como lo demuestran los resultados, así como ayudar en la deficiencia de estos nutrientes.

Abstract: Introduction: The diet of adolescents is worrisome because it presents a high frequency of unhealthy foods, in addition to high prevalences of overweight. Intervention measures in schools have been recommended to raise awareness among adolescents about food choices. Objectives: To analyze and compare the food intake of schoolchildren through healthy and unhealthy markers, before and after intervention with food and nutritional education. Materials and Methods: Descriptive and comparative study before/after intervention in Food and Nutrition with adolescents from 6th to 9th grade of elementary school, from private school. Food practice was investigated in two moments (2018/2019), through a structured food frequency questionnaire in the last seven days, prior to the interview, to identify the mean (±SD, 95% CI) and frequency of desirable consumption of healthy (=5days/week) and unhealthy foods (&lt;5 days/week) by sex. Results: Ninety-five students participated, 58.9% of them female. Regarding food practice, there was a reduction, considering the average of days per week, of meals in fast food restaurants, consumption of fried snacks and goodies, but only among boys (p&lt;0.05). No significant results were observed for the frequency of food intake before and after intervention, when categorizing the desirable consumption of healthy and unhealthy foods (=or&lt;5 days/week), as well as risk and health protection behaviors. Conclusion: The adolescents' food intake was predominantly characterized as unhealthy, both before and after intervention, according to markers evaluated, especially among girls.

Abstract: Introduction: Anthropometry is composed of techniques that assess nutritional status and enable monitoring of the health of individuals and collectivities. For greater reliability of measurements, periodic training in anthropometry is necessary, in addition to correct use and maintenance of equipment. Objective: To evaluate the operational procedures adopted by health professionals to measure anthropometric measurements after training. Methods: Cross-sectional, observational and descriptive study with professionals who perform anthropometry in 35 Primary Health Care Units in the observed municipality, trained in April/June 2019. Data collection took place from November/2019 March/2020; the procedures adopted to measure anthropometric measurements in different stages of life were observed and recorded, the professional who performed the measurements and ascertained the environment and conditions of use of the available equipment. Results: In 91.4% of the units, anthropometric measurements were performed in the reception room, but only 2.9% contained all equipment/instruments for anthropometry. The professionals who performed the most measurements were nursing assistants/technicians (61.5%) and nurses (28.5%). In all phases of life, errors were found in the measurement of weight and length/height, being more frequent those related to the position of the individual in the equipment and alignment, use of props and shoes by the evaluated. Conclusion: Despite having participated in training in anthropometry, health professionals still make mistakes that compromise the quality of nutritional status information, for all phases of life, including positioning equipment correctly in the environment. Permanent training and monitoring of measures measured need to be implemented to ensure nutritional surveillance.
